Essaouira's cuisine is known to be delicious and rich in flavor. Here are some of the traditional dishes that you should not miss during your visit to Essaouira:

  1. Grilled fish: Essaouira is a fishing town, so it's not surprising that fish is a central ingredient in the local cuisine. Grilled fish is often served with vegetables and fresh bread.

  2. Fish tagine: Another popular fish dish is fish tagine, which is cooked with vegetables, spices and olives.

  3. Marinated sardines: Sardines are another must-try fish dish in Essaouira. Sardines are often marinated in lemon and spices before being grilled and served with fresh bread. The sardine balls in tagine are the great specialty of Essaouira but few restaurants serve them because it takes a long time to make...

  4. Fish soup: Fish soup is a warm and comforting dish, perfect for cooler evenings. It is prepared with different types of fish, vegetables and spices.

  5. Beghrir: Beghrir are light and fluffy Moroccan pancakes, often served with honey and melted butter for breakfast or dessert.

  6. Chebakia: Chebakia are traditional Moroccan pastries made with honey and spices, often served with mint tea.

  7. Zaalouk: Zaalouk is a Moroccan vegetable dish prepared with eggplant and tomatoes, seasoned with garlic, coriander and cumin.

  8. Pil-pil shrimp: Shrimp sautéed with garlic, chili pepper and olive oil.

  9. Pastilla: a sweet and savory dish made of brick pastry filled with chicken, almonds and cinnamon.

  10. The briouates: small triangles of brick sheets stuffed with meat, vegetables or cheese.

These traditional Essaouira dishes are only examples but we have many other recipes to give you!
